Description

The Axe and Compasses are proud to announce that they won best Traditional Pub at the Essex Food & Drink Awards 2008. At the Axe and Compasses, Aythorpe Roding, husband and wife team David and Sheila Hunt are set to restore more than just the structure...

The purchase of the Axe and Compasses under sealed bid brings a challenge to restore both the Grade 2 listed building itself along with the traditional values that have made the British pub industry both unique and iconic.

"Our vision for the Axe and Compasses is a return to what we call a 'proper' pub"

The 17th Century pub is situated thirteen miles from Stansted Airport and Junction eight of the M11 and approximately twenty minutes from Chelmsford. The age of the building and neglect from a year's vacancy has provided numerous problems. Work has been under way for two weeks and already a collapsed drainage system, archaic electrics and restoration of the original thatched roof are costs that have had to be endured.

David, a self taught chef, cooks with passion and consummate skill, qualities which have been instrumental in the success of previous ventures. The couple's professional past has seen them gain entries and reviews in publications such as the AA Guide, Michelin Pub Guide and the Guardian.

At the Axe and Compasses customers will be reacquainted with old favourites to be enjoyed whilst gazing over unspoilt views of the English countryside. More substantial offerings will consist of items such as New Season Rack of Lamb with Spring Vegetables and Minted Jersey Royals followed by Treacle and Pecan Tart served with Homemade Brown Bread Ice Cream.

Ales direct from the cask, will be a main feature with barrels behind the bar playing host to a vigorous guest beer policy offering seasonal ales from small regional and craft brewers.
